After a long day of work, cooking is the last thing on my list, let alone cooking a healthy meal. Who wants to work after work?!?!?! But, there is an easy way that doesn’t involve the microwave or a delivery app.
This Monday Mash-Up Meal is part of my “Let’s just pull random things out of my fridge and cabinent and see what I can make” game that I play with myself probably twice a week. This meal features:
- Frozen broccoli
- Frozen sweet corn
- Frozen chicken tenders
- Trader Joe’s Everyday Seasoning
- Olive Oil
- Balsamic Vinaigrette
- Whole Grain Rice/Quiona mix
Cook the quiona/rice mix separately (just follow the instructions on the box for that, nothing special)
Next put some olive oil on the pan with a sprinkle of the Everyday Seasoning and place the chicken on the pan filling the rest of the pan with frozen broccoli and corn. Cover pan to let all the frozen goodness thaw and properly cook on medium heat. After about three minutes I flipped the chicken and added a dash of balsamic vinaigrette over it all and some more Everyday Seasoning, covered for another three minutes. Uncover the chicken and just flip the chicken until fillies cooked and browned to your preference all while mixing the veggies.
Once everything is browned and cooked to your likings and the rice is cooked. Mix it all together and serve it up! I added a splash of italian dressing in the recipe at the end just to give it a little more flavor (and sort of salad dressing just adds it another flavor).
Ta da! You have yourself your first lazy delicious meal. Best part is, it makes a perfect premade dinner for the next day for lunch!
