perfect dinner for one

A single gal in the city not dressed up and no where to go, why not make yourself a fancy dinner for one? Treat Yo Self Monday! 

It is a simple recipe, simply cover the chicken with salt and pepper to season with olive oil in the pan and throw in some broccoli to brown it while the chicken is cooking. While waiting to cook fully, prepare the plate with a pesto spread as a base to put the chicken on. Once cooked, slice into smaller pieces and then place atop of the pesto spread, drizzle some mozzarella cheese to let it melt and add some sundried tomatoes for flavor. And BOOM- you’ve got the perfect meal for one. 

So sit back, grab a glass of wine, eat on the couch because you can, throw on some 30 Rock or Girls and enjoy! You deserve it!
